Jamaican jerk marinade

Handsome made this as a gift for his brother’s birthday and it is absolutely delicious. We gifted it in a storage jar, along with the recipe on a little card. You can make and keep this for one month in the refridgerator and it would be great with any meat of fish. Marinade for at least two hours, then grill for dark delicious spicy perfection.

Ingredients

5 green onions
5 sprigs of fresh thyme
2 teaspoons salt
1/2 teaspoon ground black pepper
1 tablespoon brown sugar
2 teaspoons ground allspice
1 teaspoon nutmeg
1 teaspoon cinnamon
2 scotch bonnet peppers
1/3 cup soy sauce
2 tablespoon vegetable oil
1/4 cup white wine vinegar
1 yellow onion, chopped roughly
1/2 cup orange juice (fresh is best)
2 cloves garlic, chopped roughly
1 teaspoon grated ginger

Instructions

  1. Place all ingredients in a food processor and chop/blend until a fine liquid paste.
  2. Store in airtight container for up to one month.
